Baingan Bharta is a dish from Indian state Punjab. Baingan Bharta is simple and easy to prepare. It is fire roasted eggplant mash cooked with spices. There are different way of making this bharta, here I am sharing most common way of making bharta.

Some people roast the eggplant in microwave but if you want that smoky aroma flavor then roast it just on an open flame. Here, I am sharing recipe of Punjabi style Baingan Bharta in which flavor come from roasting eggplant well.

The smoky flavor makes its so flavorful and you love it even if you don’t like eggplant. It can be serve with Indian bread, roti or paratha.

Ingredients For Baingan Bharta Recipe

  • 1 large brinjal
  • 3tbsp oil
  • 1/2tsp cumin seeds
  • 1/2tsp mustard seeds
  • 1tsp ginger garlic paste
  • 1finelly chopped green chili
  • 1finelly chopped tomatoes
  • 1finelly chopped medium onion
  • 1tsp red chili powder
  • 1tsp turmeric powder
  • 1tsp coriander- cumin powder
  • 1/2tsp sugar
  • Salt to taste
  • Green coriander leaves for garnishing


Method For Baingan Bharta

1. Take large brinjal and grease it with oil. Roast it on an open flame for 8-10 minutes until the brinjal’s skin blistered completely and become soft. Prick it with knife and checked it cooked from inside.

2. Once it roasted, submerge it in a water and peel the skin. Cut of the stem and smash it.

3. Heat the oil in a pan and add cumin seeds and mustard seeds, wait till crackled.

4. Add ginger garlic paste and saute till it turns golden brown.

5. Add chopped onion and saute until it become soft.

6. Add tomatoes, red chili powder, turmeric powder, coriander-cumin powder, salt and mix well. Cook until the tomatoes become soft.

7. Add smashed brinjal and mix it well.

8. Add sugar and cook for 2-3 minute.

9. Garnish it with green coriander leaves and serve with Indian bread.

Dal Tadka is cooked lentils which are tempered with oil or ghee, fried spices and herbs. Tadka is a technique in which spices and herbs are fried in oil or ghee, so that the spices release essential oils which add aroma, flavor and taste in a dish in which tadka is added.

In India we temper everything like vegetable dishes, dal, chutneys. In India every state has its own recipe of making dal. This dal tadka recipe is north indian style, you can use any yellowish split lentils. Making dal tadka is very easy first made a dal and then temper it just before serving.

It can be served with jeera rice or steamed rice. It can be also served with roties.

Ingredients for Dal Tadka Recipe

tbsp = Table Spoon
tsp = Tea Spoon

  • 1 cup toor dal
  • 1.5 tsp salt
  • 1/2 tsp turmeric powder
  • 3.5 cups water
  • 1 inch ginger
  • 4 garlic cloves
  • 1 green chili
  • 1.5 tbsp ghee
  • 1 tbsp crushed coriander seeds
  • 1 tsp cumin seeds
  • 2 cloves medium
  • 2 copped medium tomatoes
  • 1 chopped medium onion
  • 1/2 tsp coriander powder
  • 1/4 Kashmiri red chili powder
  • 1/4 tsp garam masala
  • 1/8 tsp red chili powder
  • 2 tbsp chopped cilantro
  • 1 tsp Kashmiri methi

For Tadka

  • 2 tsp ghee
  • 2 chopped garlic cloves
  • 1/4 tsp hing
  • 2 dried red chilies
  • 1/4 Kashmiri red chili powder
  • Metled ghee, tiece of charcoal for dhungar method

Method for Dal Tadka Recipe

1. Add toor dal along with turmeric, 1 tsp salt and 3 cups water to a pressure cooker

2. On high heat pressure cook it for four whistle, then lower the heat and cook for 3-4 minutes

3. Let the pressure release it self.

4. Mean while crush ginger, garlic and green chili

5. Then heat ghee in pan on medium heat. Add cumin seeds, cloves and crushed coriander seeds saute until fragrant.

6. Then after add onion and cook till it become soft and golden brown.

7. Add crushed ginger-garlic-green chili. Cook for 1-2 minute

8. Then add chopped tomatoes and salt and mix well.

9. Cover the pan and cook for 7-8 minutes until tomatoes become soft.

10. Add garam masala coriander powder, Kashmiri red chili powder, Red chili powder, Kasuri methi and cilantro

11. Stir the spices for few seconds

12. Add the boiled dal to the pan.

13. You can also add the water if Dal look very thick. Let the Dal simmer for 3-4 minutes.

Tadka Method

For tadka heat 2 tsp ghee in a small pan. Add 2 chopped garlic cloves, hing and dried red chilies. Cook until the garlic turns golden brown. Add Kashmiri red chili powder and remove pan from heat. Pour tadka over the dal and mix it well.

Dhungar Method :

Place a steel bowl on top of a trivet placed in the dal. Then take a piece of charcoal and heat until its become red hot. Then put a hot charcoal in the steel bowl on top of the trivet. Pour a ghee (1 tsp) on charcoal. Immediately covered the pan with lid. Let remain for 10-15 minutes and after open lid and remove the bowl. The dal will get smokier, the longer you keep the lid closed.

Garnish with chopped coriander leaves and serve it with rice. 😋

Pav bhaji is an Indian fast food dish which consisting thick vegetable curry and served with a bred roll (pav). It is particularly from Mumbai and popular all over India. Pav means bread rolls and bhaji is one Marathi word, which is used for vegetable based dish. In this dish bhaji and pav served together so it is called pav bhaji.

A special blends of different spices is used to make pav bhaji, which is called ‘pav bhaji masala’. It is easily available in indian stores. There are so many variations in pav bhaji in which mostly vegetable used are same but some more ingredients or spices blends are added. It is served with pav and for garnishing you can use fresh green coriander leaves, chopped onion and lemon slice.

Ingredients for Pav Bhaji Recipe

tbsp = Table Spoon
tsp = Tea Spoon

  • 2tbsp butter + 2tbsp vegetable oil
  • 2 finally chopped tomatoes
  • 1 finally chopped onion
  • 1/4cup peas (mutter)
  • 1/2cup finally chopped capsicum
  • 3/4cup chopped cauliflower
  • 2chopped medium size potato
  • Salt to taste
  • 1/4tsp turmeric powder
  • 2tsp kasuri methi
  • 1 1/2tsp pav bhaji masala
  • 1 1/2tsp Kashmiri red chili powder
  • 1tsp ginger garlic paste
  • 1tsp lemon juice
  • 2tbsp finally chopped coriander leaves
  • Water to adjust consistency

To toast Pav

  • 8 pav
  • 4tsp butter

Method For Pav Bhaji Recipe

1. Take a pressure cooker and add into chopped potato, chopped cauliflower and peas. Add 1\2cup water and salt to taste. Close its lid and pressure cook it on medium flame for 2 whistle. Keep it aside and let release the pressure naturally. It will take 5-6 minute.

2. Now open the lid of cooker and mash all the boiled vegetable.

3. Heat 2tbsp oil and 2tbsp butter together in pan on medium flame. Add ginger garlic paste saute until it turns golden brown.

4. Add chopped onion and chopped capsicum, chopped tomato and salt. Saute until it becomes soft.

5. Then add 1 1/2tsp Kashmiri red chili powder, 1\4 turmeric powder,1 1\2 tsp pav bhaji masala and 2tsp kasuri methi. Stir and cook for 2 minutes.

6. Now add 3\4 cup water, mix well and cook for 2-3 minutes.

7. Now add smashed vegetable and add 1tsp lemon juice. Mix it well and add some water if needed for consistency. Cook for 4-5 minutes.

8. Now turn off the flame and add 2tbsp chopped coriander leaves.

9. Cut the buns or pav horizontally into two parts. Heat tava on medium flam add a tbsp of butter and place pav on it. Roast both side of pav till brown spot appear on it. Then transfer to the plate. Shallow fry each pav.
Serve pav bhaji with a piece of butter, chopped onion and slice of lemon. Check out more food recipes here.
